Cassia cinnamon, also known as Chinese cinnamon, is a more robust variety of cinnamon with a less delicate and even "slightly more bitter" flavor than Ceylon cinnamon. Nevertheless, these properties make it very good for flavoring many liqueurs, and, in fact, many of our customers at Valencia's Central Market buy it to flavor gin tonic. Visually, it can be distinguished from Ceylon cinnamon because it is harder and its bark is coarser, whereas Ceylon cinnamon is softer and consists of several coiled layers. Therefore, our recommendation is that you buy Cassia cinnamon to flavor gin tonic or other cocktails, and Ceylon cinnamon, which can also be puchased on our website, for the preparation of desserts or sweets (meringue, rice pudding, custard, etc....), due to its milder and more delicate aroma.
